This Banana Cookie Bread is a yummy recipe to make for gifts, care packages, hostess gifts, or an after school snack for the kids!

Banana Cookie Bread Recipe
So good–and both kids and adults LOVE this recipe!
Ingredients needed for banana cookie bread:
- Bananas (overripe are the best!)
- Eggs + butter
- Brown sugar + raw sugar
- Vanilla
- Whole wheat flour
- Oats
- Baking soda +baking powder + salt
- Peanut butter chips + chocolate chips
- Walnuts

When I decided to make a care package for my son who recently moved away, this recipe came to mind. And that quote. It’s always nice to “tip ourselves” and think of others!

The next thing that happened is I pulled out the mixer … butter, bananas, chocolate … and other ingredients that I quickly laid on the kitchen counter.
Banana Bread like a cookie
Fresh out of the oven, the box was packed!
And mailed off thenext day, packed with “fall” goodies.
We call it cookie bread, because when sliced, it’s thick, rich, and gooey like a cookie–slightly different than a loaf of bread.
Do for others
It’s good to think of others!
This time, our son in college would open his box and feel “a little at home.”

Ingredients
- 3 bananas, mashed
- 2 eggs
- 1/4 cup brown sugar
- 1/2 cup raw sugar
- 1/2 cup butter, softened
- 1 tsp. vanilla
- 3 cups whole wheat flour
- 2 cups oats
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 3/4 cup peanut butter chips
- 3/4 cup chocolate chips
- 1/2 cup walnuts, chopped
Instructions
This recipe is easy to double and freeze, or give away as gifts in care packages, hostess gifts, or to neighbors.
Preheat oven to 350 degrees. Grease 4 small loaf pans with cooking spray.
Mash the bananas on a plate and set aside. In a large bowl, combine the eggs, both sugars, butter, and vanilla. Add in the mashed bananas and gently stir.
Add the flour, oatmeal, and other dry ingredients. Mix with a wooden spoon.
Add in the chips and nuts. Mix together.
Spoon the mixture into prepared loaf pans. Bake for 20-25minutes.
Allow the loaves to cool 15 minutes before removing from the loaf pans. Cool each loaf; wrap with plastic and freeze or give away!

this looks really good, but have children with nut and peanut allergy- afraid it might lose lots of flavor if I omit the nuts and chips- any suggestions to replace these flavors?

I had 4 overripe bananas on my counter and made this bread when I got home yesterday. It. Is. The. Best. I could not believe that it stayed so moist and flavorful given the whole wheat flour and oats. OMG. This is now my “go to” recipe. My daughter, who is not quite 2 yet, was pulling my piece out of hand while exclaiming “mine” and “it’s good”! YUM.

Yum!!!! you say “oatmeal”….so is that cooked oatmeal, or raw oats? I just had never heard it referred to in a recipe as oatmeal so wanted to check.
I can’t say as I’ve sent a food care package before, but this looks awesome and what a treat to receive.
