This Air fryer muffins recipe is extremely easy, moist, fluffy and taste excellent.

Over the top they are vegan, best way to use overripe bananas and get ready in 10 minutes, much more quicker than the oven.

BAKING IN AIR FRYER

Our Blog has numerous baked recipes and all are done in the oven.

This is for the first time we are baking in air fryer and honestly speaking, we were amazed by the results and especially baking duration over the top.

With the batter in hand, 15 muffin moulds could be filled.

We Air fried 7 muffins in air fryer because only this much could be accommodated in the air fryer basket in one go and rest were baked in oven.

To our utter surprise, where oven took nearly 25 to 30 minutes, air fryer done its job in 10 minutes only.

And the Air fried muffins were no way less than the muffins baked in oven. They were equally browned, soft, moist and fluffy.

DOES AIR FRYER NEED PREHEATING?

When it comes to baking, it is suggested to pre-heat the air fryer atleast for 5 minutes on the same temperature over which your recipe is suggested to the baked.

However in general, air fryer needs no preheating when it comes to basic and routine cooking.

INGREDIENTS USED IN MAKING AIR FRIED BANANA MUFFINS

BANANAS : Prefer to use ripe to overripe bananas for the recipe. More ripe the banana is, more moist and sweet will be the Muffins.

Secondly, size of banana also matters. Ours were big sized bananas so used 4. If you have small bananas, then go for 6 and 5 in case of medium one.

In order to make the measurements to the point, we have mentioned the weight of peeled bananas as 410 grams.

WHOLE WHEAT FLOUR : Wheat flour makes the healthier baking in comparison to the refined flour although wheat flour makes heavier cakes/muffins in comparison to the one made of refined flour. Choice is yours.

SUGAR : We have used bura sugar which comes in a powdered form. Feel free to use any sweetener of your choice, be it granulated sugar, brown sugar, cane sugar or Jaggery powder.

OIL : Oil has to be such which has no taste and smell of it’s own. We have used the refined oil.

In place of oil, you can use vegan butter or dairy butter, if you are not vegan.

BAKING POWDER/SODA : They make the muffins soft and fluffy.

SALT : Pinch of salt will help in developing the taste of muffins.

VANILLA ESSENCE : This is for fragrance and good flavour of muffins.

Ingredients

1 cup = 200 ml

  • 4 Bananas (big sized ripe to overripe - 410 gram after peeling)
  • 1.5 cup whole wheat flour (214 gram)
  • 1/2 cup sugar of your choice (we used bura sugar)
  • 2/3 cup oil (150 ml + little more for greasing muffin moulds)
  • 1 tsp baking powder
  • 1/2 tsp Baking soda
  • Pinch of salt
  • 1 tsp vanilla essence

Instructions

  • Take a big bowl and add bananas in it.
